The Penuche (pronounced PAH-NEW-CHEE) roll is distinguished from the other pecan rolls by the addition of brown sugar and maple flavoring to the nougat center. A light, fluffy nougat center, carefully shaped and dipped in rich caramel, is then rolled in extra large fancy pecan pieces.
